Millet and Red Pepper Salad

 


Ingredients

100g millet
1tsp yeast extract
400ml boiling water
Juice and grated rind of an orange
30g raisins
30g dried cranberries
30g dried sour cherries
1 tbs of light olive oil
2 tsps garam masala
2 tsps turmeric
1 red onion finely chopped
1 red pepper finely chopped
A few turns of pepper to taste

Method

Put the yeast extract and the millet boiling water and cook for about 4 minutes. Make sure it is still firm when you take it off the heat, pour into a sieve and rinse it in cold water. Place in a bowl to cool completely whilst you prepare all the other ingredients. Add all the rest of the ingredients and stir well. Leave to rest for at least half an hour for the flavours to develop.
