Quinoa Flour Cheese Muffins



300ml milk
125g butter (softened)
2 large eggs
125g quinoa flour
160g fine polenta
tsp salt
tsp black pepper
tsp mixed herbs
2 tsp baking powder
50g grated sharp cheddar cheese


Preheat oven to 220 degrees. Blend milk, eggs and butter in a food processor.
Mix dry ingredients together and add to liquid. Fold in grated cheese.
Spoon mixture level to the top of each mould.
Bake in greased muffin tray until golden (10-15 minutes). Makes 12 muffins.
